Wine:

The PN AYC 18 Blanc de Noirs Brut Blanc Champagne showcases the Aÿ terroir with 2018 as the base year, complemented by reserve wines dating back to 2009. This is a rich and ample champagne, marked by great vertical tension and the full-bodied depth of Pinot Noir. The finish, with its impressive saline dimension, is truly dazzling. Rated 94/100 by Parker.

Vinification:

Hand-harvested. Cru principal d'Aÿ, associated with other villages, Tauxières and Verzenay in particular. Base year: 2018, reserve wines aged in magnum, the oldest dating from 2009, exclusive use of the wine. Maturation in the cellar more than twice as long as the appellation rules, i.e. over 30 months maturation on lees in the cellar.
Dosage: 6 gr/l (Brut).

Temperature:

Serve between 8 and 10°C.

Food and wine pairing:

Aperitif, salmon tartar with dill, raw and marinated fish, seafood, pike with beurre blanc, langoustine nage with saffron, roast poultry, veal and a jus réduit.

From now until 2035, and even longer for enthusiasts.
