Wine:

New at the Egly-Ouriet estate, made from a majority of chardonnay, supplemented by pinots noirs and meuniers, the 'Les Vignes de Bisseuil' Brut Premier Cru Champagne is the negative, in the photographic sense of the term, of Ambonnay's pinot noir dominated wines. Vinified in wood, it offers all the charm of the "white ones". It comes from the 2017 harvest and is always very lightly dosed. It delivers subtle aromas of flowers and almonds. Vigorous and chiseled, very straight, this wine ends with a long finish with saline accents. Another feat by Francis Egly, who never ceases to surprise and delight us. Perfect at the beginning of a meal, with raw fish or delicate dishes.

Vinification:

Hand harvested, vinified with indigenous yeasts and in oak barrels. Aged in cellar for 48 months before disgorging. Made from the 2017 harvest and 2016. Unfiltered wine.

Dosage : 2 gr/l.

Clear and bright gold.

Nose:

Aromas of flowers, lime blossom, a touch of aniseed, honeyed, completed with notes of almonds.

Palate:

Vigorous, chiseled, very Chardonnay in style, markedly chalky, this bubble charms us with its purity, its elegance and its long saline and salivating finish.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Aperitif, sea bass tartar, pan-fried foie gras, scallops and langoustines, blue lobster from Brittany.

Spanning nearly 17 hectares, with ten classified as Grand Cru (in Ambonnay, Bouzy, and Verzenay), Francis Egly continues his remarkable work, which very few houses can match, now with the support of his son Charles and daughter Clémence. The balance and finesse of his wines are unmatched and represent an exceptional classicism.

From the very first cuvée in the range, one is captivated by this honest style, which balances strength and restraint while skillfully handling pinot noir. These are robust champagnes, underscored by very old vines, wines vinified in barrels and matured extensively in the cellar to refine and blossom at just the right moment. Purity, nobility, and definition are impressively regular features.
