Wine:
Racy and full-bodied, the 2017 White Domaine du Pavillon Clos des Mouches Beaune 1er Cru is a Chardonnay wine that equals in complexity and nuances of perfume the great wines of the Côte de Beaune. White flowers, honey, beeswax notes mingle with sober aging in oak barrels, a quarter of which are new, to create a dense and generous wine for sure. A wine to be savored on its own first, then paired with a fine fish or poultry.Vinification:
Hand harvested, vinification in oak barrels, 45% of which are new, for 2 weeks to 3 months.Aged in oak barrels, also 25% of which are new, for 12 to 15 months.
