Hand harvested on 1 September 2022, completely destemmed. Cold pre-fermentation maceration for 5 days, vatting for a total of 3 weeks. Natural fermentation without sulphur. Aged in oak barrels, 25% new, for 14 months. Bottled on 18 January 2024.Certified organic wine.
