Wine:

The 2020 Clos Vougeot Grand Cru Red is an exceptional Burgundy built for long aging, having spent nearly two years in barrels. Sourced from a 1.28-hectare plot in the 14 Journaux area—one of the most clay-rich sections of the Clos—it expresses remarkable depth. From the first aromas, it reveals a highly complex bouquet of black fruits, green pepper, eucalyptus, and rose.
On the palate, it is powerful, rich, and intensely refined, unfolding sumptuous, fleshy fruit flavors, elevated by layers of spice—clove, black pepper, and nutmeg—all framed by dense, vibrant tannins. With extraordinary aging potential, this wine will reach its full expression over the next ten years and beyond.

Vinification:

Hand harvested. 35% whole bunches and 75% destemmed, 21 days of vinification in open wooden vats, 2 punch downs per day during the active phase of alcoholic fermentation, malolactic fermentation carried out in full. Aged in oak barrels for 21 months.

Dark red, brilliant and intense, with a delicate purplish hue.

Nose:

Very complex notes of black fruit mixed with hints of green pepper, eucalyptus and rose.

Palate:

Powerful, rich, and intensely refined, this wine unveils sumptuous, fleshy fruit flavors, elevated by layers of spice—clove, black pepper, and nutmeg—framed by dense, vibrant tannins.

Temperature:

Serve between 14 and 16°C in a large glass.

Hare stew à la royale, venison noisette with peppercorn sauce, roast chicken with chanterelles.
