Wine:

Promising a long aging potential, the 2019 white Vin de Constance has just been released to our delight and to that lover of great sweet wines. Resulting from an organic culture and biodynamic practices, it is delivered, after three years of maturation, in a structure of great vibration. On the nose, there are subtle notes of white peach, and ripe citrus fruits, with a touch of orange zest. On the palate, there is a perfect harmony between flavors of lemon cream, citrus, and spices, a total balance sublimated by a touch of very fresh ginger that prolongs the finish. This wine is a sweet delight to be savored quietly with a marbled pastry or a citrus salad.

Vinification:

Hand harvested, long fermentation (up to 6 months) for 50% in new French oak barrels, Hungarian oak barrels and French acacia barrels. Aged 18 months in new oak barrels of 500 liters and 18 months in tuns.

Residual sugars: 166 g/l. Sweet wine.

Bright golden yellow of good intensity.

Delicately perfumed with beautiful aromas of white peach, citrus peel and white flowers.

Palate:

Complex and tasty, this wine expresses wonderful spicy notes. This perfect balance between acidity and sweetness reveals a long finish that evolves throughout the tasting, a majestic work of incomparable style.

Temperature:

Serve between 10 and 12°C.

To be enjoyed alone or with a citrus dessert, foie gras, blue-veined cheeses.

It is even said that Napoleon Bonaparte drank it on St. Helena... It is more than 300 years of history bottled up, which easily rivals the most prestigious Sauternes or sweet wines of the Loire and Alsace regions... The legend continues since 1685...
