Wine:

Grown on a sun-drenched, limestone-rich terroir from 70-year-old vines, the 2023 White Chablis Premier Cru Vaillon is a textbook expression of the appellation. It offers bright floral notes and crisp white fruit, combining ripeness with the vibrant freshness that defines great Chablis. A subtle touch of oak adds depth without overshadowing its purity, while the finish lingers with a refined mineral bitterness that brings both structure and precision. A beautifully crafted Premier Cru, built for both immediate pleasure and aging potential.

Vinification:

Hand harvested, grapes carefully selected on a sorting table, cold settling. Vinification and ageing in temperature-controlled stainless steel vats and barrels for 8 months.

Certified organic wine. AB Ecocert certification since the 2013 vintage.
