The estate and the wine Rooted in Cravant-les-Coteaux, the heartland of Chinon's finest Cabernet Francs, Domaine de Pallus spans 14 hectares of limestone slopes — a prized location that has been nurtured by the Sourdais family since 1889.

Year after year, the estate demonstrates remarkable consistency, producing cuvées that showcase vivid aromas of red and black berries, shaped by the purity of these exceptional limestone soils. With organic farming and meticulous parcel-by-parcel vinification, Bertrand Sourdais crafts wines that reflect the unique identity of each plot.

The estate’s wines are aged for 5 years in the cellar before release and have earned a place on the wine lists of some of the world’s most prestigious Michelin-starred restaurants, including The Fat Duck in London, Caprice at the Four Seasons in Hong Kong, Pierre Gagnaire, and Le Taillevent in Paris.
Wine The 2019 Chinon Red Les Pensées de Pallus, crafted entirely from the prized slopes of Cravant, reveals a concentrated, expressive nose with intense aromas of graphite, black fruits, and a hint of fresh leather. The palate is refined and precise, with a touch of truffle adding complexity to its fresh, focused profile. Silky, polished tannins provide structure and elegance, making it an ideal match for ribeye steak or slow-cooked lamb. While already enjoyable, it has the potential to evolve gracefully over the next 5 years or more. Rated 92/100 by the Selection Committee.
Vinification Hand harvested, fermented and macerated for 21 days in concrete vats with indigenous yeasts, aged for 12 months in Burgundy barrels and 6 months in concrete vats.
