Hand-harvested, 100% destemmed. Cold pre-fermentation maceration in stainless-steel vats for around 6 days, followed by alcoholic fermentation using only indigenous yeasts, with daily pumping-over and temperature and density controls. Very little punching of the cap is carried out, the number depending on the context of the vintage. Vatting time averages 20 days. Malolactic fermentation and ageing in oak barrels, 30% of which are new and the rest aged for 1, 2 and 3 wines. Aged for 15 months, then racked to stainless steel tanks for 2 to 3 months. Wine neither fined nor filtered before bottling. Vines aged 60 years and over on 1.87 ha. |
