Hand harvested. Destemming, transfer to vats, fermentation in open vats for 25 to 30 days, cold pre-fermentation for 4 to 5 days, 1 punching of the cap and 2 pump-overs per day. Aged in oak barrels, 20% of which are new, for 12 months. Plot of 0.56 ha, planted from 1972 to 1995, clay-limestone soil. |
