Focusing on achieving exceptional ripeness, Pascal Cotat crafts two white wines that age beautifully, designed with restraint to ensure their long-term evolution. Sourced from some of Sancerre's finest terroirs, including La Grande Côte and Monts Damnés, these wines are skillfully aged in barrels with no use of new oak, preserving their purity and finesse.

With a stylistic precision and a limited production, Cotat’s wines are benchmarks for revealing the potential of these remarkable limestone soils over time. These Sancerre classics deserve a place in the cellar to fully appreciate their complexity and longevity.
Wine The 2022 White Sancerre Les Monts Damnés comes from the renowned south-facing slope of the same name. This white wine offers subtle smoky, white fruits and ripe citrus notes. It has a pure, full-bodied, and precise palate, characterized by a remarkable freshness. A wine built for aging.
Vinification Hand-harvested grapes undergo gentle pneumatic pressing, followed by cold settling in tanks. Native yeasts are used exclusively for fermentation, which, along with aging, takes place in demi-muids for 6 to 8 months. The wine is neither fined nor filtered, preserving its purity and integrity.
