The estate and the wine It is a rare house, to which very few have access. Philippe Pacalet is an ultra-sensitive person, one of those who transcribe Burgundy with the most accuracy through the most natural vinifications possible, in whole bunches, without sulfur, followed by long maturations, in organic culture of course.

In the tradition of his mentors Marcel Lapierre and Jules Chauvet, he makes wines that combine mastery and aestheticism, perfect reflections of the great Burgundian terroirs that he has been exploring for twenty years. Awarded 2 stars in the French Guide Vert RVF, he makes sublime wines, of incomparable softness and precision, which are among the most authentic of their appellations.
Wine From vines averaging 65 years old, 80 ares planted mid-slope, the 2018 red Corton Bressandes Grand Cru achieves the quintessence of refinement. The whole harvest gives it a superb velvety texture, with notes of precious woods, smoke, and spices, but also of fresh fruit, with elegance, where a floral touch unites with the sensation of fresh grapes. Juicy and full-bodied, with an innate combination of power and delicacy, this pulpy wine has a solidity that will allow it to defy the test of time. Simply splendid. Rated 97/100 RVF.
Vinification Hand-harvested, vinified in whole bunches sorted for 3 weeks without added sulfites and with twice-daily punching of the cap, alcoholic fermentation with indigenous yeasts without artificial temperature control, malolactic fermentation and ageing on lees in barrels "en réduction" without racking, with stirring without added sulfites, for 16 months.
