A veritable open-air laboratory, Le Bon Pasteur has long been a daring enterprise, under the aegis of its former owners Michel and Dany Rolland: high-ripeness harvesting, limited yields, luxurious ageing and full vinification with barrel fermentation. An approach that makes the most of this terroir of gravel and clay.
Now under the Hong Kong flag, the cru continues this modern, ultra-seductive style, with superb ageing potential.
Technical director Benoît Prévôt has refined the style while retaining a superbly unctuous Merlot, blended with 20% Cabernet Franc for a powerful backbone. The 2023 perfectly recreates this sensation of fullness, with velvety, flattering flesh, free of any flaws in construction or balance, provided with a spicy, toasty woodiness.
