The estate and the wine
The estate and the wine A revelation in the Côte Chalonnaise, Domaine Tupinier-Bautista is the must-watch estate in Burgundy. Recently featured in the Guide RVF and praised by Olivier Poussier, Best Sommelier in the World and member of our Selection Committee, this once-hidden gem is now earning the recognition it deserves.

With 11 hectares in Mercurey, Manu Bautista crafts wines of exceptional depth and balance, showcasing concentrated, pure flavors. His thoughtful choices in vineyard management and aging allow the character of his village and premier cru terroirs to shine.
Wine The 2023 Red Mercurey Vieilles Vignes is a beautifully crafted Pinot Noir, balancing rich, ripe flavors with just the right touch of oak. Hints of balsamic and a subtle influence from its aging add depth, while time in the bottle will bring even greater harmony. Full and satisfying, with smooth, well-structured tannins, it’s a wine to enjoy over the next 5 to 6 years with dishes like duck breast or roast beef. Rated 92/100 by the Selection Committee.
Vinification Hand harvested. 100% de-stemmed, 20-day vatting period, cold and warm maceration. Aged for 13 months in 228-litre oak barrels, of which 30% are new and 70% are 1, 2, 3 and 4 years old. Production of 10,000 bottles.
The vines are 60 years old, on 2 hectares of clay-limestone soil.
