Wine From 60-year-old vines and a cool vintage, the 2021 Red Santenay Les Vieilles Vignes beautifully showcases the estate’s hallmark delicacy and charm. This Pinot Noir opens with fresh, floral aromas of rose, peony, and herbal tea, which carry through to the palate. Its finely chiseled structure reflects the vintage’s crisp energy and vibrant character. Savory and approachable, it’s an elegant wine to enjoy over the next four years, perfect alongside roast veal or coq au vin.
Vinification Hand-harvested grapes sourced from vineyards managed under biodynamic-inspired principles and a strict set of guidelines. After a gentle crushing and destemming, the grapes undergo a few days of cold maceration before fermentation begins. Fermentation, using 100% indigenous yeasts, takes place in temperature-controlled stainless steel tanks with regular pump-overs and/or punch-downs to ensure optimal extraction.Following fermentation, the wine is gently pressed with a pneumatic press, then undergoes malolactic fermentation and ages on fine lees for 15 months in oak barrels (30% new oak), followed by an additional month in stainless steel tanks. Bottling is done in accordance with the lunar calendar, with no fining and only light filtration to preserve the wine’s natural character and purity.
