Wine:

The 2020 Southern Australia Yattarna Bin 144 White is a pure Chardonnay and an ambitious cuvée first created in 1995. Fermented and aged in French oak barrels, it opens with complex aromas of grapefruit zest, toasted brioche, and an enticing smoky, grilled oak character. On the palate, the fruit shines with remarkable purity, rich creamy notes, and vibrant freshness, leading to a long, lingering finish. A beautifully structured, world-class wine. Vinification:

Hand harvested. Fermentation in new and old French oak barrels. Aged for 8 months in French oak barrels, 86% of which are new and 14% in one-wine barrels.

Color:

Bright pale golden yellow.

Nose:

Complex and refined, with aromas of citrus fruit, grapefruit peel, lemon zest, hints of almond and toasted brioche, and a hint of minerality.

Palate:

From the very first sip, a vibrant acidity shines through, mirroring the purity found on the nose. Subtle vanilla notes hint at expertly controlled barrel ageing, adding depth and finesse without overshadowing the wine’s character.

Temperature:

Serve between 10 and 12°C.

Tartar of sea bream with citrus zest, creamed Bresse poultry, fish terrine with fresh herbs.
