Wine:

Largely dominated by Cabernet Sauvignon (97%), the 2015 red Pauillac Château Latour displays undeniable charm, with beautiful black fruit aromas of cherry, blackcurrant and plum, and floral, spice and menthol nuances. The structure is both consistent, thanks to the great maturity of the vintage, and refined, hemmed in by silky tannins, offering a wonderfully balanced wine. The freshness is irresistible and the finish is long-lasting, mineral and delicious. Rated 96/100 by Parker and 97/100 by RVF and B+D.

Vinification:

The grapes are destemmed and crushed, then transferred to stainless steel fermentation tanks. Fermentation lasts up to three weeks. After run-off, during which the free-run wine is separated from the pomace, the wine is put back into vats to undergo a second malolactic fermentation. Each wine is then blended in vats, and "descended" into barrels in December. The wine is then aged for almost 18 months.
The entire Château Latour vineyard has been in conversion to organic farming by Ecocert since 2015, with organic certification issued by Ecocert as of the 2018 vintage. At the same time, biodynamic principles are applied to the majority of the Enclos.

Aromas of cherry, blackcurrant and plum mixed with floral, spicy and menthol nuances.

Palate:

Buoyed by the great ripeness of the vintage, this wine offers a perfect balance, with a framework of great consistency, refined and hemmed in with silky tannins, irresistible freshness and a finish of great persistence.

Temperature:

Serve between 14 and 16°C in a large glass.

Food and wine pairing:

Quail with figs, Quercy lamb rubbed with rosemary, oven-roasted prime rib with herb crust.

Cellar aging:

From now until 2040, and even longer for enthusiasts.
