Wine:

The spring frost left only a few bunches standing, and once again, the 2021 Sauternes Château d'Yquem impresses with its concentration and balance. With a high sugar content but innate freshness, this vintage stands out for its finesse and complexity. Notes of tangerine, candied citrus, exotic fruit and summer flowers melt into a full, infinitely smooth framework. Vinification:

Hand-harvested grape by grape.
Aged 100% new oak for two years (Bordeaux barrels, fine-grained wood from various French forests, 24-month dry period and medium toast).
Bottling in September 2023. Wait 6 months in bottle before marketing to allow the wine to acclimatize to its new container.
Residual sugars: 148 g/l.

Color:

Deep golden yellow.

Nose:

Aromas of tangerine, candied citrus and exotic fruit, all haloed by floral scents.

Palate:

Soft and full-bodied, with very ripe fruit, this cuvée releases fine, complex juice with great depth.

Temperature:

Serve between 6 and 8°C.

Food and wine pairing:

Raw or semi-cooked foie gras with fig confit or mango jam, blue-veined cheeses (fourme d'Ambert or Montbrison on toast), citrus salad, crêpes Suzette, hot mandarin soufflé, vanilla crème brûlée or on its own as a meditation wine.
