Wine:

The 2017 Nuits-Saint-Georges Premier Cru Roncière Red showcases remarkable energy and expressive character. Its velvety tannic structure is both rich and refined, offering impressive persistence on the palate. True to the essence of Nuits-Saint-Georges, it embodies the depth and intensity that define this prestigious terroir, with all the hallmark richness and complexity one expects from a great Burgundy.

Vinification:

Vines aged 50 years or more on 0.50 ha, located between Les Porêts and Les Pruliers. Hand-harvested. 100% destemmed. Cold pre-fermentation maceration for around 5 days, alcoholic fermentation using only indigenous yeasts in stainless-steel vats, daily pumping over with temperature and density controls, very little punching down depending on the context of the vintage. Vatting time averages 20 days. Malolactic fermentation followed by 15 months' ageing in barrels, 30% of which are new and the remainder aged for 1, 2 and 3 wines, then racking and massing for 2 to 3 months in stainless steel tanks. No fining or filtration before bottling.

Temperature:

Serve between 14 and 16°C in a large glass.

Food and wine pairing:

Roast guinea fowl with porcini mushrooms, tournedos of beef with green pepper, herb-crusted shoulder of lamb, roast duck aiguillettes and beet confit with rosemary, mature Burgundy cheeses like that from Abbaye de Cîteaux.
