Wine:

Grown in a unique microclimate that combines sunshine with refreshing coolness, and sourced from 50-year-old vines, the Gevrey-Chambertin 2020 is a standout expression of its appellation. Crafted with whole-cluster fermentation, aging on fine lees without sulfur or racking, it showcases remarkable clarity and precision. The result is a wine of striking purity, with a rich and structured texture, complemented by a refined aromatic profile and impressive depth. This cuvée epitomizes Philippe Pacalet’s artistry, offering a palate that is both generous, intricate, and delicately balanced. Rated 93/100 by RVF.

Vinification:

Hand-harvested, vinified in whole bunches for 3 weeks without added sulfites, with twice-daily punching of the cap, alcoholic fermentation with indigenous yeasts without artificial temperature control, malolactic fermentation and ageing on lees in rooms without racking, with stirring without added sulfites, for 13 months and then 3 months in tuns.
