Hand-harvested, vinified in whole bunches, sorted without SO2, with twice-daily punching down for 2 weeks.Alcoholic fermentation with indigenous yeasts without artificial temperature control, malolactic fermentation in rooms.
Aged on lees, "reduced" room-ageing without racking, with SO2-free riddling for 16 months.
