Wine:

Sourced from a rocky slope of limestone with a touch of clay, the 2021 Ruchottes-Chambertin Grand Cru showcases the finesse of Pinot Noir at its most expressive. Crafted with whole-cluster fermentation and aged on lees without added sulfites, it reveals a remarkable balance of power and grace. Delicate fruit and subtle spice notes weave through a vibrant, precise, and harmonious structure. This is a grand wine of refined persistence, built for aging and contemplation, standing proudly at the pinnacle of its range.

Vinification:

Hand-harvested, vinified in whole bunches, sorted without SO2, with twice-daily punching down for 2 weeks.
Alcoholic fermentation with indigenous yeasts without artificial temperature control, malolactic fermentation in rooms.
Aged on lees, "reduced" room-ageing without racking, with SO2-free riddling for 16 months.

Color:

Deep red with good intensity.

Nose:

Red and black fruit aromas punctuated by spicy notes.

Palate:

Elegant and powerful, this cuvée captivates with its perfectly ripened character. Built for aging, it delivers a vibrant, precise profile that promises both refinement and longevity.

Temperature:

Serve between 14 and 16°C.

Food and wine pairing:

Veal tongue with Madeira sauce, roast duck with foie gras, marcassin haunch.

Cellar aging:

From now until 2040, and even longer for enthusiasts.

This is a rare and exclusive estate, accessible to only a fortunate few. Philippe Pacalet, a deeply intuitive winemaker, captures the essence of Burgundy with precision and elegance through the most natural vinification methods—whole-cluster fermentations without sulfur, followed by extended aging.

Following in the footsteps of his mentors Marcel Lapierre and Jules Chauvet, Pacalet crafts wines that blend technical mastery with artistic finesse, perfectly reflecting the exceptional Burgundian terroirs he has explored for over two decades.

Awarded 2 stars by the RVF Guide (Revue du Vin de France), his exquisite wines, celebrated for their unmatched delicacy and precision, rank among the most sought-after in their appellations.
