Wine:

The 2017 Clos de Vougeot Grand Cru Red reveals striking aromas of blackcurrant, rose, and spice, offering a vibrant array of flavors with remarkable nuance and intensity. This is a meticulously crafted wine with depth and integrity, supported by refined blond oak that promises to integrate harmoniously over time. Precision defines its flavors, while the texture shows impressive breadth and lasting persistence. Awarded 96/100 by the RVF Guide (Revue du Vin de France).

Vinification:

Vines aged 60 years or more on 1.87 ha. Hand-harvested. 100% destemmed. Cold pre-fermentation maceration for around 6 days, alcoholic fermentation using only indigenous yeasts in stainless steel tanks, daily pumping over with temperature and density controls, very little punching down depending on the vintage profile. Vatting time averages 20 days. Malolactic fermentation followed by 15 months' ageing in barrels, 30% of which are new and the remainder aged for 1, 2 and 3 wines, then racking and massing for 2 to 3 months in stainless steel tanks. No fining or filtration before bottling.

Temperature:

Serve between 14 and 16°C in a large glass.

Food and wine pairing:

Veal chop with morel mushrooms, tournedos Rossini, beef cheek confit with pinot noir, roast guinea fowl, aged Saint-Nectaire fermier cheese from Cîteaux Abbey.

Cellar aging:

From now until 2040 and beyond for enthusiasts.
