Wine:

The Échezeaux Grand Cru 2021, rooted in sandy, ferruginous limestone soils worked by horse, reveals an impressive structural intensity. This wine’s generous, bold character is matched by dense, firm tannins, creating a profile that is both powerful and refined, with vibrant energy. Aromas of blackberry, raspberry, and floral notes weave seamlessly into a deeply concentrated, structured palate, brimming with depth and precision. A truly exceptional wine destined for extended aging—perfect for those willing to let it rest in the cellar.

Vinification:

Hand-harvested, vinified in whole bunches for 3 weeks with no added sulfites and twice-daily punching of the cap, alcoholic fermentation with indigenous yeasts without artificial temperature control, malolactic fermentation and ageing on lees in rooms, without racking, with stirring and no added sulfites for 17 months.

Blackberry and raspberry aromas punctuated by floral notes.

Palate:

Generous and layered, this cuvée boasts an assertive character, unveiling a deeply structured wine with firm tannins and remarkable depth.

Veal medallions with foie gras, Rossini duck breast, lamb chops with thyme flower.

Cellar aging:

From now until 2035, and even longer for enthusiasts.

Philippe Pacalet is a rare gem in Burgundy, crafting wines that few have the privilege to experience. An ultra-sensitive winemaker, he translates the essence of Burgundy with precision and elegance, employing natural vinification methods with whole-cluster fermentation, no added sulfur, and extended aging.

Following in the footsteps of his mentors Marcel Lapierre and Jules Chauvet, Pacalet creates biodynamic wines that blend mastery and artistry, offering a pure reflection of Burgundy's finest terroirs—terroirs he has been exploring for over two decades.

Awarded 2 stars in the RVF Guide, his wines, known for their unparalleled finesse and precision, are among the most coveted across their appellations.
