Wine:

The 2018 red Clos de la Roche Grand Cru boasts magnificent intensity, a solemn and profound wine closely resembling Chambertin. Its highly calcareous terroir imparts a dense tannic fabric and a vast aromatic richness, with flavors of licorice, plum, and black fruits. The concentrated, velvety, and profound substance integrates well with its noticeable aging and refined tannins. Freshness permeates the flesh of this caressing yet deep wine, whose finish seems endless. Rated 93-95/100 by Parker.

Vinification:

Hand-harvested. 65-year-old vines. Vinification: 80% whole grapes, 20% destemmed, 17-day vatting period, 5 to 7 cap punchings and pumping over. Pressing, settling for 2 weeks and transfer to barrels. Aged 14 months in barrels (40% new, 60% one- to three-wine barrels). Racking then resting for 3 months in vats before bottling without filtration or fining.

Temperature:

Serve between 14 and 16°C in a large glass.

Noble butcher's cuts, tournedos Rossini, sautéed veal chop with sage jus, game birds, aged farmhouse Saint-Nectaire cheese.
