From clay-rich soils on the Volnay side near Vaumuriens, the 2021 Red Pommard Les Vieilles Vignes is a refined classic with a fresh, infused style. Notes of stone fruit, raspberry, and rose lead to a delicate palate framed by fine tannins and a bright, tangy character. The result is a beautifully balanced, approachable wine that’s both elegant and uplifting. Ready to enjoy now, it will continue to shine over the next 3 to 5 years, pairing wonderfully with marinated meats or braised ham.Vinification:
Hand-harvested grapes sourced from vineyards managed under strict biodynamic-inspired principles. The grapes undergo gentle crushing and destemming, followed by a few days of cold maceration. Fermentation takes place in temperature-controlled stainless steel tanks, using 100% indigenous yeasts, with regular pump-overs and/or punch-downs to enhance extraction. After fermentation, the wine is gently pressed using pneumatic presses, then undergoes malolactic fermentation and ages on fine lees for 15 months in oak barrels (30% new oak), followed by one month in stainless steel tanks. The wine is bottled according to the lunar calendar, with no fining and only a light filtration to preserve its purity and character.Color:
