Wine:

Absolutely sumptuous, the 2016 white Château-Chalon demonstrates a remarkable depth, navigating a complex array of spices, underbrush, curry, and green walnut. There's an almost peaty sensation, with a salty and incredibly fresh aspect, hints of walnut husk and turmeric. The structure harmonizes power and freshness, tension and voluptuousness; this grand wine beautifully embodies a strong mineral tension driven by limestone, and a vibrant energy throughout. What a magnificent wine, destined for eternal aging! Discover its magic paired simply with a 24 to 36-month aged Comté cheese or a traditional poularde in yellow wine sauce. An absolute favorite of our Committee and rated 95/100 by Olivier Poussier.

Vinification:

Harvested by hand, aged for 6 years in unoaked barrels under a yeast veil.
