Wine:

The newly hatched 2021 white Savennières Les Vieux Clos boasts a brilliant golden hue, more intense than any of its peers. The nose reveals a high degree of ripeness, with the usual slight oxidative notes from the Joly family, joined by hints of mirabelle plum and white fruit. The palate is generous, rich, and full, framed by a fine, measured aging process. The slight sweetness on the finish makes the wine quite charming, and it could be served with fine fish or spicy cuisine.

Vinification:

Hand harvested, aged in oak barrels for 6 to 8 months, new wood limited to 5%, indigenous yeasts, no chaptalization or re-levage.

Vineyard certified organic and biodynamic since 1981.

Beautifully intense, brilliant gold.

Nose:

Ripe with notes of mirabelle plum and well-integrated ageing.

Palate:

This rich-textured, generous, full-bodied wine, with its ripe juices and slightly sweet palate, is quite charming.

Temperature:

Decant before serving between 10 and 12°C.

Food and wine pairing:

Back of pike-perch with beurre blanc, simply grilled sea bass, sole or turbot, fish saves mousseline, smoked fish platter, cider chicken.
