The 2021 red Châteauneuf-du-Pape is a magically charming wine like few others. Supported by delicate grenache grapes, it unfurls a delicate texture of juicy cherry, garrigue and other fruity aromas, with silky tannins. An enchantment far removed from the robust reds of the appellation, it opens the doors to a fascinating universe!Vinification:
The grapes are harvested by hand, sorted in the vineyard and partially destemmed. Vinification, in concrete vats, lasts between 20 and 25 days, during which pumping-over and temperature control are carried out daily. After pressing, the wine is returned to the same vats for malolactic fermentation. It is then aged for 12 to 18 months in 50hL tuns. All batches are then blended into a single cuvée.
