Wine:

Originating from the historic Les Serres district, known for its geological patchwork of rolled pebbles, gravel, blue clays, sands, and limestones, the 2017 red Châteauneuf-du-Pape Réserve Auguste Favier reveals itself with maturity and precision. The fruit is spot-on and remains enticing, with beautiful aromas of black fruits and spices, and the palate maintains a great straightness, with a lovely richness of tannins. This is an elegant and unifying wine that ages wonderfully.

Vinification:

Hand-harvested. Traditional vinification, whole and destemmed grapes. Aged 14 months in 4-wine demi-muids.

Estate certified organic by Demeter in 2013 and certified Biodynamic by Demeter in 2021.

Certified organic wine.

Temperature:

Serve between 14 and 16°C in a large glass.

Food and wine pairing:

Rack of lamb roasted with thyme, beef daube with red wine, pan-fried porcini mushrooms or chanterelles, oven-roasted guinea fowl wrapped in bacon.

Cellar aging:

From now until 2030, and even longer for enthusiasts.

An icon of Châteauneuf-du-Pape and awarded 2 stars by the RVF Guide, Domaine Saint-Préfert - Famille Isabel Ferrando is one of the most prominent and sought-after addresses. Located in the southern part of the appellation, this estate embodies all the codes of excellence: organic and biodynamic farming, massal selection, tailor-made vinifications with indigenous yeasts, and meticulous aging.

Moreover, the vineyard encompasses nearly all the geological varieties of the appellation, where Isabel Ferrando applies her incredible energy, crafting reds with remarkable freshness and distinction, and equally enchanting whites, undoubtedly among the most successful in the region.
