Wine:

With 70% old-vine Macabeu and the remainder Grenache Blanc, the 2021 white IGP Côtes Catalanes Vieilles Vignes already showcases devilishly salivating purity and great length. The strong mineral identity and honeyed notes create a precise, upright, and deep profile, beautifully aromatic with acacia flower and the typical controlled reduction of the domain, along with a signature toasty-smoky energy. The taut and finely crafted structure is marked by beautiful mineral bitters and intense flavor. Superb, and destined to age gracefully for many years! Rated 94/100 by RVF.

Vinification:

Hand harvested in crates. Direct pressing, settling at low temperature. Aged 7 to 8 months on fine lees, 65% in barrels and 35% in vats.

Nose:

Expressive aromas of white flowers, acacia and honey, underlined by a mineral note.

Palate:

Précise et droite, cette cuvée offre un jus tendu et fin, une trame ciselée et pure déroulant sur de beaux amers minéraux.

Serve between 10 and 12°C.

Fine tart with Collioure anchovies, grilled fish, sea bass with fennel, Provençal red mullet.
