Wine:

A blend of the estate's oldest vines (50 to 100 years old), dominated by Grenache, the 2020 red Côtes du Roussillon Villages Vieilles Vignes offers remarkable depth linked to a fleshy, expressive nose with floral and spicy notes. This wine is very complex, deep and well structured, and is destined for long aging. Discover it in four or five years, and later on, with grilled meat.

Vinification:

Hand harvested and destemmed, pre-fermentation maceration at low temperature, temperature-controlled fermentation with gentle extraction by daily punching down, draining, resting in vats for 2 months before blending and then maturing for 12 months in concrete vats.

Color:

Very dark brilliant red.

Nose:

Fruity and spicy aromas.

Palate:

Dense and measured, this wine reveals a beautiful balance between density, acidity, texture and quality of tannins as well as concentrated flavors of fruit.

Temperature:

Decant 3/4 hours before serving at 16-18°C.

Food and wine pairing:

Hunting dishes, red meat in sauce or on the grill.
