Wine:

Made from old Carignan vines planted on schist between 1911 and 1944, the 2021 Red IGP Côtes Catalanes Reliefs is a full and deep wine, which provides an insight into the fascinating world of old vines. The notes of black fruits, olive, laurel, macerated and candied fruits melt a full and tasty palate, with a good character. A very nice full and tasty wine, already ready to drink after some decanting.

Vinification:

Hand harvested, vinification in whole grains and whole bunches, with indigenous yeasts and fermentation in concrete tanks. Aged in barrels and concrete vats for 10 months, then 7 months in bottles.

Organic and Biodynamic wine, certified.

Color:

Dark red, almost black.

Nose:

Beautiful aromatic bouquet marked by fruit flavors (black, macerated and candied) and spices.

Palate:

This wine is full-bodied, with a deep character and a well-integrated ageing process.

Temperature:

Decant before serving between 16 and 18°C.

Food and wine pairing:

Red meat a la plancha, duck breast with honey and spices, lamb brochettes.
