Wine:
A pure Chasselas, the 2023 White Lavaux Grand Cru Villette La Bolliattaz comes from a monopole vineyard planted at 500 metres altitude on clay-limestone soils. This steep, south-facing terraced vineyard overlooks the Alps, benefiting from optimal sun exposure. Aged on fine lees, this white wine reveals itself with delicate richness, opening with a beautifully ripe nose. The palate is just as generous, unfolding with a fine bitterness that enhances its length and persistence. With its ample, textured profile, this is a food-friendly wine, perfect with sole meunière, fish terrine, or roasted cod. Rated 92/100 by the Selection Committee.Vinification:
