Domaine Chante Cigale - Châteauneuf-du-Pape - Pi - Rouge - 2021

Wine:

Originating from a sandy terroir, the 2021 red Châteauneuf-du-Pape Pi is a true delight. A fragrant and floral red, with delicate fruitiness, consistency, and a full mouthfeel. The quality of the extraction is ideal, propelling fine and elegant tannins in a concentrated texture that remains extremely flavorful. A great bottle to keep for 15 to 20 years. A Committee favorite rated 94/100.

Vinification:

Harvested by hand. Berries infused for 18 to 24 days with light punching down and pumping over. Aged in French oak foudres for 15 to 18 months.

Color:

Intense, powerful ruby reds.

Nose:

Aromatic and elegant, with aromas of red and black fruits, notes of crushed strawberries and an airy, floral dimension.

Palate:

The initial taste is juicy, rich and full-bodied, with fine tannins that lengthen the finish. A magnificent infusion of fruit on a fresh, flavorful frame.

Temperature:

Serve between 14 and 16°C.

Food and wine pairing:

Spit-roasted lamb spiked with anchovies, seared prime rib flavored with rosemary, lamb chop.
