On the palate, it offers richness and depth, with a creamy texture and a beautifully balanced, rounded character. Already drinking well, this is a generous, approachable wine crafted in a style that highlights the best of the Côte de Beaune. Rated 94/100 by the Selection Committee.Vinification:
Hand-harvested grapes are pressed whole using a pneumatic press, followed by overnight settling in stainless steel tanks at 12°C. Fermentation and ageing take place on the lees over 18 months, including 12 months in oak: 10% new barrels, 50% one-wine barrels from Damy cooperage, 30% in a 2018 Rousseau foudre, and 10% in older Burgundy barrels from Stockinger cooperage. The wine is then aged an additional 6 months in stainless steel tanks before being bottled at the estate. The parcels, known as "Chassagne du bas," are located in the northern part of the appellation and span 2.40 hectares, including Houillères, Pierres, and Plantes St-Aubin. The vines are cultivated biodynamically (uncertified), ensuring respect for the terroir and its natural balance.
