The 2020 red Nuits-Saint-Georges 1er Cru Clos de Thorey Monopole comes from a 3-hectare plot in the northern part of the premier crus. This dense and powerful wine is well-suited for aging, but in two or three years, it will beautifully complement dishes such as poultry or veal chops.

Vinification:

Hand-picked on August 25 and 26, 2020 (flower and leaf days). 5% whole grapes, not crushed and vatted by gravity. No yeasting or enzyming. Cold pre-fermentation maceration (12-15°C) for 5 days. Total maceration 18 days. One light pumping over per day until the end of vatting. Pressing with a vertical press. Aged 16 months in barrels, 30% of which are new (origin of wood: Cîteaux and Tronçais forests). All barrels racked. No fining, light filtration. Bottling on December 6, 2021 (fruit day) for magnums and jeroboams, and December 7, 2021 (fruit day) for bottles. Limited edition of 8977 bottles, 600 magnums and 60 jeroboams.
Parcel of 3.0771 ha, south-facing, plantings: 1975 bas du Clos, 2023 haut du Clos. Organic farming since 2012, Ecocert accreditation as of 2015. Bio-dynamic agriculture since 2012, without certification.
