Wine:

The 2023 White Chablis captures the purity and tension of this exceptional terroir. Its fresh, subtly mineral nose, characteristic of Chablis, reveals delicate red fruit aromas, notably strawberry, intertwined with floral notes. The palate is generous, ripe, and finely chiseled, offering superb balance and vibrant energy, all without any oak influence. While it will benefit from a few more months of cellaring, it can be enjoyed over the next three years. Rated 92/100 by the Selection Committee.

Vinification:

Mechanical harvesting. Vinification in stainless steel vats, alcoholic fermentation at low temperature (18°C) and malolactic fermentation. Aged for 12 months in stainless steel vats.

Nose:

Fresh, with subtle mineral notes intertwined with red fruit aromas, notably strawberry, and delicate floral touches.

Palate:

Generous and finely structured with ripe fruit aromas, this cuvée is lively, well-balanced, and highly enjoyable. It will benefit from a few more months of ageing before reaching its full potential.

Temperature:

Serve between 10 and 12°C in a large glass.

Seafood platter, cheese gougères, grilled prawn kebabs.
