The 2021 Red Burgundy Cuvée Saint-Vincent perfectly captures the lightness and elegance of a vibrant Pinot Noir, with bright notes of red berries and sour cherries. Refined and pure, it reveals a crisp, fruit-forward structure, beautifully balanced by thoughtful aging (30% in new oak) and framed by silky, already delicate tannins. A classic, approachable Burgundy that reflects the vintage’s character. Best enjoyed young, within the next three years.Vinification:
Hand-harvested grapes sourced from vineyards managed under strict biodynamic-inspired guidelines. The process begins with a gentle crushing and destemming, followed by a few days of cold maceration. Fermentation is carried out exclusively with indigenous yeasts in temperature-controlled stainless steel tanks, with regular pump-overs and/or punch-downs. After fermentation, pneumatic pressing is used, followed by malolactic fermentation and aging on fine lees for 15 months in oak barrels (30% new oak), then an additional month in stainless steel tanks. The wine is bottled with minimal intervention, undergoing no fining and only a light filtration, in accordance with the lunar calendar.Color:
