Wine:
The 2017 red Gevrey-Chambertin is a refined and velvety wine, with precise and very tasty fruit that delivers great sweetness and a polished, smooth texture from the aging process. Its black fruit aromas, highlighted by a lovely spicy undertone, contribute to its allure. This wine is ready to enjoy now or can be aged for a few more years.Vinification:
Hand-harvested. 65-year-old vines. Vinification: 80% whole grapes, 20% destemmed, 17-day vatting period, 5 to 7 cap punchings, pumping over. Pressing, settling for 2 weeks and transfer to barrels. Aged for 14 months in barrels, 40% of which are new and 60% of which are for one to three wines. Racking then resting in vats for 3 months before bottling, without filtration or fining.Certified organic wine.
