Wine:

The 2017 red Nuits-Saint-Georges offers great freshness, with floral notes, raspberry, and blackcurrant. It unfolds a delicate structure, although the tannin is prominent, adding depth. Flexible and approachable, this Nuits does not sacrifice intensity or character. It's a joy to experience! Perfectly balanced, it pairs wonderfully with lamb chops or beef bourguignon.

Vinification:

Harvested by hand. 50-year-old vines. Vinification: 80% whole grapes, 20% destemmed, 17-day vatting period, 5 to 7 cap punchings and pumping over. Pressing, settling for 2 weeks and transfer to barrels. Aged for 14 months in barrels, 40% of which are new and 60% of which are for one to three wines. Racking followed by 3 months' rest in vats before bottling.

Temperature:

Serve between 14 and 16°C in a large glass.

Beef Bourguignon, herb-crusted rack of lamb, roast poultry, duck breast.

From now until 2027 and beyond for enthusiasts.
