Wine:

The 2021 Red Nuits-Saint-Georges Les Charmois expresses Pinot Noir in its most notable finesse; scents of roses, notes of chalk, and blood orange combine in a splendid, totally harmonious structure, with a texture true to this terroir, all in velvetiness. Here is a tonic and refreshing wine, finely crafted and precise, endowed with excellent freshness. Rated 95/100 by the Selection Committee.

Vinification:

Hand-harvested, 100% destemmed. Cold pre-fermentation maceration in stainless-steel vats for around 6 days, followed by alcoholic fermentation using only indigenous yeasts, with daily pumping-over and temperature and density controls. Very little punching of the cap is carried out, the number depending on the context of the vintage. Vatting time averages 20 days. Malolactic fermentation and ageing in oak barrels, 30% of which are new and the rest aged for 1, 2 and 3 wines. Aged 15 months, then racked to stainless steel tanks for 2 months. Wine neither fined nor filtered before bottling.
Vines aged 50 years and over on 0.52 ha.

Color:

Brilliant ruby.

Nose:

Very fine, powdery, rose fragrances mixed with notes of chalk and blood orange.

Palate:

Splendid! Tonic, thirst-quenching and chiselled on perfectly ripe fruit, this cuvée offers a framework of total harmony in a velvety texture.

Temperature:

Serve between 14 and 16°C in a large glass.

Food and wine pairing:

Roast woodcock, tournedos of beef with green pepper, herb-crusted rack of lamb.

Cellar aging:

From now until 2031, and beyond for enthusiasts.
