Wine:

Partly sourced from a parcel on granite, the 2022 red Burgundy Hautes Côtes de Beaune Paris Lā€™Hôpital Rouge delivers freshness and the delicate charm of a finely vinified whole-cluster Pinot Noir. The palate is silky, with present yet integrated tannins, and elegant touches of fresh fruit that linger beautifully.

Vinification:

Hand harvested, vineyard located in Paris l'Hôpital (west of Santenay and Chassagne-Montrachet).
Whole-harvest vinification, indigenous yeast fermentation, 10-month ageing in oak barrels without new wood.

Color:

Bright ruby red.

Nose:

Fresh aromas of red and black fruits, underlined by spicy notes.

Palate:

Silky-smooth and delicate, this wine has mellow tannins and a persistent fruity finish.

Temperature:

Serve between 14 and 16°C.

Aperitif with country terrine, artisan pâté en croûte, slow-cooked suckling pig chop, fondue bourguignonne.

From now until 2029.

Since 2010, Chanterêves has been the home of two talents, Tomoko Kuriyama and Guillaume Bott. Tomoko honed her skills in Germany's Rheingau region with renowned winemakers like Peter Jakob Kühn and Georg Breuer. Guillaume gained experience at Domaine Simon Bize in Savigny-Les-Beaune and then at Etienne Sauzet in Puligny-Montrachet.

After these valuable experiences, the couple combined their strengths and sensibilities to create their own wines, producing cuvées that are precise, delicate, and moving.

Practicing organic farming, whole-cluster fermentation for reds, no filtration, gentle vinification, indigenous yeasts, minimal sulfur, and aging without new oak... all the hallmarks of excellence are in place. Their micro-production quickly found a dedicated following.
