Wine:

The energetic 2020 white Puligny-Montrachet is a straightforward, slender wine with notes of lemon and vine blossom, combining ripeness and freshness, presenting itself as pure and uncluttered. Made from three plots in the heart of the village, planted in 1956 with more recent vines, it benefits from perfect exposure between Meursault and Chassagne-Montrachet. A gastronomic white to be enjoyed with cooked fish.

Vinification:

Hand harvested on August 24, 25 and 26, 2020. Sorting in the vineyard and at reception in the winery. Whole grapes pressed. 12-hour settling. Aged for 16 months in barrels (27% new, origin of wood: Cîteaux, Europe), then 2 months in stainless steel tanks. Bâtonnage (stirring of the lees) once a month under a rising moon until December. Bottling on April 20, 2022 for magnums and April 25, 2022 for bottles. Limited run of 7832 bottles and 60 magnums.

Parcels: La Rue aux Vaches de 0.4567 ha, planted : 2006, Noyer Bret de 0.2719 ha, planted : 1956, Aux Paupillots de 0.33 ha, planted : 1973. Organic farming with Ecocert approval received in 2000. Biodynamic agriculture since the 2001 campaign, without certification.

Temperature:

Serve between 10 and 12°C in a large glass.

Food and wine pairing:

Fillet of sole with tarragon butter, monkfish navarin, lightly creamed Bresse poultry.
