Wine:

The 2015 white Burgundy Cuvée Réserve  is an exemplary and perfectly ripe Chardonnay. Indeed, its beautiful harvest maturity is appreciated, pleasantly highlighted by a well-adjusted woodiness where floral notes dominate and chalkiness provides support. The palate is broader and more aromatic, with a rich, generous, yet very well-balanced juice. The bitters are fine, and the wine can still hold for another 2 to 3 years, but it can be enjoyed right now with freshwater fish, a salmon terrine, or a section of cod in beurre blanc. A Committee Favorite rated 92/100.

Vinification:

Hand-harvested, malolactic fermentation carried out in full.
80% of the harvest matured in demi-muids and the remaining 20% in 228-litre barrels.
Average age of vines 48 years, surface area 2.30 ha, south-east exposure, clay-limestone terroir, altitude 245 m.

Nose:

Marked by aromas of white flowers and a lovely, discreet woodiness.

Palate:

Full-bodied and generous, this well-balanced cuvée releases a full-bodied juice with lovely freshness and bitter finish of great finesse.

Temperature:

Serve between 10 and 12°C.

Salmon terrine, cod with beurre blanc.

From now until 2026.
