Also from old vines, the 2018 red Gevrey-Chambertin 1er cru Clos Saint-Jacques is harvested from 1 ha 60, vines planted, as Sylvie Esmonin so aptly puts it, "from top to bottom, like everyone else in this famous clos". Old Pinots from 1925, but also younger ones from the 1980s. Vinification takes place in very traditional wooden vats, with 60 to 80% whole grapes, followed by ageing in 50 to 80% new barrels for 12 months. Here again, a rare bottle of exquisite quality, a terroir that expresses itself over time. Never rush, wait in the cellar to appreciate them better.
A prominent figure in Gevrey-Chambertin and an inspired winemaker, Sylvie Esmonin presides over a treasure trove of old vines, primarily on the legendary terroirs of the Côte de Nuits.
Practicing biodynamics in her vineyards, she continues to infuse her wines with incredible vitality, primarily vinifying with whole clusters, reviving the golden age of the 19th century when Pinot Noir resonated with a unique natural brilliance. This unparalleled style, forged over two decades, now allows the domain to stand at the highest level alongside the greatest references in Burgundy.
Despite its modest size, this estate is a sensation among enthusiasts who consistently find a unique soul here. Discovering it is necessary, but acquiring its wines remains a challenge.
