True to its origins, the 2023 White Chablis 1er Cru Côte de Jouan reveals vibrant notes of fennel, orchard fruit, and a distinctive mineral signature. Aged without oak, this classic and approachable white is fresh, refined, and effortlessly drinkable. Its crisp, saline profile makes it a perfect match for oysters or sea urchins—a bright, food-friendly style sure to win over any crowd.

Vinification:

Hand harvested. Gentle pressing, static settling. Fermentation with indigenous yeasts and ageing on lees in stainless steel vats for 8 to 12 months with several stirring operations.

Nose:

Aromas of orchard fruits mixed with beautiful vegetal notes of fennel and celery and a smoky-mineral, gunflint accent.

Palate:

Fresh and precise, with lively citrus and orchard fruit. This classic Chablis is elegant, vibrant, and beautifully balanced—perfect with sea urchins and oysters.

Serve between 10 and 12°C.
