Wine:

A real treat! The 2022 red Ad Libitum Touraine is a perfect combination of Cabernet Franc, Gamay, and Côt. The red fruit notes, freshness, and graphite signature of the Cabernet are just right. Sober in aging, the tight palate with its particularly seductive violet and licorice flavors remains highly digestible, imbued with finesse and elegance. A red to be enjoyed over 3 or 4 years with a country terrine. A Selection Committee Favorite.

Vinification:

Hand harvested, macerated and fermented in concrete vats for 10 to 12 days, aged in concrete vats for 4 to 5 months, lightly earth-filtered before bottling.

Color:

Bright, intense red with hints of violet.

Nose:

Beautiful aromatic palette marked by the graphite of the Cabernet and the ripeness of red fruit, all offering a lovely freshness.

Palate:

Elegant and delicate, this wine is easy to digest, supported by a tightly-packed palate revealing particularly seductive violet and licorice flavors.

Temperature:

Serve between 16 and 18°C.

Food and wine pairing:

Grilled beef with thyme, thick-cut pork with paprika, pigeon with pepper concasse, country terrines and artisanal charcuterie.
