Wine:

The 2023 white Châteauneuf-du-Pape is a classic, offering lovely notes of white flowers and a hint of fennel. Grounded in its mineral dimension, this well-balanced white wine has no excessive alcohol, exuding total freshness, with fine bitterness and a beautifully round, indulgent mouthfeel.

Vinification:

Hand harvested and sorted on the vine. 1.1 ha on sandy-clay terroir, in the localities of La Janasse and La Crau. Pneumatic pressing, vinification in vats for Grenache and Clairette and in barrels for Roussanne. Aged on lees for 7 months in vats for the Grenache and Clairette, and in barrels (3/4 new) with bâtonnage for the Roussanne.

Temperature:

Serve between 10 and 12°C in a large glass.

Food and wine pairing:

Fillet of Saint-Pierre cooked on the skin, salt-crusted sea bass, scallops.

Cellar aging:

From now until 2032.
