Wine:

Blending Grenache and Syrah, the 2021 red Châteauneuf-du-Pape Pie VI displays a lightly extracted, very refined profile, with notes of stone fruits, spices, and dry herbs. The moderate, perfectly controlled aging allows the fruit to take center stage, within an infused framework, featuring a full and generous mid-palate, framed by fine and delicate tannins. The 2021 vintage is notably fresh, flavorful, and elegant, with a slender and athletic build. A superb cuvée to keep for at least 10 years. Rated 95-96/100 by RVF.

Vinification:

Harvested by hand. Vinification in unlined concrete vats. Fermentation with indigenous yeasts, vatting for 4 to 5 weeks. Aged 18 months in concrete vats.

Nose:

Subtle aromas of red and black fruits, spices and dried herbs.

Palate:

This cuvée reveals a magnificent infusion of fruit with fine, delicate tannins. Moderate ageing gives it a lovely freshness, a sapid, elegant wine.

Temperature:

Serve between 14 and 16°C.

Food and wine pairing:

Confit pig cheek with chanterelle mushrooms, prime rib with stuffed bell pepper, grilled duck breast.
