Domaine Le Soula - IGP Côtes Catalanes - Blanc - 2017

Wine:

The 2017 White Soula, made from 8 different grape varieties, is a charming wine, where finesse and elegance prevail. Grown on a terroir of decomposed granite, between 350 and 600m above sea level, this great white wine offers an intensely aromatic nose of flowers, fruit and sweet spices. Mineral and beautifully mature, with citrus flavors and delicate bitters, this wine has everything to seduce!

Vinification:

Hand harvested. Aged 22 months in demi-muids, foudre and vats.

Certified organic wine.

Color:

Pale yellow, brilliant.

Nose:

Intense aromatic complexity on opening: flowers, fruit, sweet spices.

Palate:

It shows its lovely ripeness, dry and mineral, and those fruity citrus flavors that punctuate the finish with delicate bitters.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Chicken tajine with apricots, ceviche, grilled fish, seafood, green asparagus au gratin with parmesan, anchovy tart, mature cheeses.

Cellar aging:

From now until 2027.

At first, his English importer (also importer of Romanée Conti, Rayas...) wanted to make an easy, friendly wine... Gérard Gauby soon unveiled the Fenouillèdes terroir, and Domaine Le Soula became one of the region's must-visit addresses!

Trained at the finest estates in South Africa and the United States, Wendy Wilson took over the reins of the estate team in 2016 and its 22 hectares of vines, which have been farmed organically since the beginning, and biodynamically since 2008.
